IN-SEASON: This is an incredibly satisfying bite. Tachiuo, or Japanese beltfish, is a delicate silver-skinned white fish prized for its soft texture and clean, subtle sweetness. We lightly aburi torch the skin, top it with fresh grated ginger yakumi, and finish it with our in-house nikiri.
